Wheel & Tire options for HPDE

I have several options in wheel tire sizes for HPDE/TT days. The car is a 2010 Callaway Grand Sport SC606. Looking for advice on best handling, fit, impact on stability control, most flexibility for other tire types not listed, supporting tire sponsors, or whatever is important to consider. For example should I consider 18x12 rears as it opens up a few more tire options (like Toyo R888)

IIRC this is close to your first rodeo.

Run stock tires at least a couple of events.

I've been doing this a long time with street tires with some "sticky" tires every once in a while.

I'm going to run 275x35r18 on c5 z06 18x10.5 rims.

In your case I'd keep the stock stagger, buy another set of rims that match the stockers and use hoosier or khumo's. Since you will be in HPDE for a while don't get them until you are in group 3 or you will get frustrated.

Given a choice in rears between 18x13 Hoosier R6 P345/35ZR and 19x12 Hoosier R6 P345/30ZR why should I choose one over the other?

Key here is "why".

Go with the 18".....much more popular and less expensive
